Blueberry Coconut Muffins

Servings: 6-12 small to medium sized muffins

Preparation time: 15 to 20 minutes

Cook time: 15 to 20 minutes

Ingredients:

  • Melted coconut oil- ½ cup
  • Free range eggs-6
  • Vanilla extract- 1 tablespoon
  • Grade B maple syrup- ½ cup
  • Coconut flour- ½ cup
  • Wild blueberries- 1 cup
  • Aluminum free baking powder- 1 teaspoon

*You can use stevia instead of maple syrup

Instructions:

  1. Whisk together the vanilla, maple syrup, the coconut oil and the eggs.
  2. Add the coconut flour.
  3. Leave it for about 10 minutes so it can thicken.
  4. Add the baking powder and the blueberries.
  5. Bake it for 20 to 25 minutes at 350.
