If you love having spinach on your menu, there’s an important thing you should be aware of. Namely, spinach is one of those foods that should never be reheated because it also contains nitrates. When nitrates are exposed to high temperatures, they first convert into nitrites and then into nitrosamines, which are well-known carcinogens. According to nutritionists, spinach is best consumed immediately after preparation. If you have some leftovers from your spinach-based lunch, you can eat them the next day providing you don’t reheat your meal. Spinach can also be tasty when cold.
